A simple tomato salad with cognac. Adults only! Adapted from House and Garden's New Cookbook. Cook time is standing time.
- 5 -6 beefsteak tomatoes, peeled and thinly sliced
- 1⁄3 cup olive oil
- 1 teaspoon salt
- 1 tablespoon fresh basil, finely chopped
- 1 tablespoon parsley, finely chopped
- 1 teaspoon lemon zest, grated
- 2 tablespoons cognac
- Spread tomato slices on a serving plate.
- Combine remaining ingredients and drizzle over tomatoes.
- Let stand 15 minutes.
