  1. Bring coconut milk, lemongrass, and galanga to a boil.
  2. Simmer for 10 minutes.
  3. Add chicken.
  4. Simmer until chicken is partially cooked.
  5. Add mushrooms. Flavor with lime juice, lemon juice, fish sauce, chili paste, and garlic.
  6. Simmer until chicken is fully cooked.
  7. Serve with rice.
