    Directions:

      Heat the oil in a small pan and saute the onion for 2-3 minutes. Stir in the tomatoes and cook for another minute. Remove from the heat, season, and set aside.

      Preheat the sandwich toaster to the highest setting.

      Butter one side of each slice of bread. Turn one slice of bread over and on the unbuttered side sprinkle the coriander. Spread the onion mixture on top and finally top with the tofu. Cover the sandwich with the second slice of bread (buttered side up). Carefully place the sandwich in the toaster and close the lid. Cook for 4 minutes until browned.
