  1. Toss the cubbed tofu with the garlic salt and pepper.
  2. Fry the tofu in a non-stick skillet with the cooking spray until it is crispy. Flip it around in the pan often until all sides golden-brown.
  3. Remove the tofu and add the garlic and ginger. Let cooke for about 2 minutes. Add more cooking spray if the pan is too dry.
  4. Add the broccoli and bell pepper to the pan and cook until they are soft, but still have some crunch. You may need to put a cover on the pan to help them steam a little.
  5. Add the brown rice and sauces and mix together in the pan.
  6. Add the tofu back into the pan and sprinkle with the scallions.
