Tofu Spinach Pie

"very easy and light quiche I have been making for years! I have recently begun using 2 bags of baby spinach and have "wilted" it in the saute pan on top of the sauteed onions. I have also added broccoli or fresh sugar snap peas along with the spinach. Serve with a salad and crusty bread for a nice light meal."

  • Saute/ onions in oil.
  • Add in parsley and dill weed and saute.
  • add drained spinach.
  • add mashed tofu, eggs, margarine and remaining spices.
  • Cook at 375 for 25 minutes.
  • Sprinkle with cheese.

  1. This was so good. I only used 1 Tbsp of oil, omitted the butter altogether, used cheddar instead of parmesan (we were out of parm) and tastewise, you couldn't tell there was tofu in this. Definitely will be making this again, probably with some sundried tomatoes...
     
  2. so good - i used a deep dish pie crust and silk tofu- steamed 2 bags of spinach, sauted the onions in a small amount of oil - omitted the dill weed and parsley and margarine because i didn't have them - added 1 can of corn - baked about 5 extra minutes to brown the crust a little - this is a keeper, and i'll definitely be making it again
     
  3. we really enjoyed this. I made a few changes due to not having all the ingredients, but it turned out fantastic. So we used no pie crust to reduce calories and put it in a sring pan (which did leak a little so we put another pan under it) We used kale not spinach and added sundried tomatoes, cheddar not parmesan (and less of it)reduced the oil by half and only used a minimal amount of butter for the pan. We also added about 1 inch of a pepperoni stick chopped fine because thats all we had left over. The kids loved it and so did I. I think the dill made it for me! We would make it again and again...but with all my changes I would like to run it through recipezaar to find out the new nutrional info.
     
  4. This was terrific. First time I ever tried tofu, and this is very healthy. I added sweet corn, and a tablespoon of honey to give a little sweetness for flavor.
