Easy to make, it has a light flavor that goes great with salads or whatever else you normally would use mayonnaise in. I use it all the time as a mayo substitute and it works great.
- 8 ounces soft tofu
- 2 tablespoons lemon juice or 2 tablespoons vinegar
- 1⁄4 teaspoon mustard
- 1 small garlic clove, crushed
- 2 tablespoons vegetable oil
- 2 tablespoons water
- 1⁄2 teaspoon soy sauce
- 1 teaspoon sugar
- Add all ingredients to a blend and blend until smooth.
