From Louise Hagler’s cookbook, Tofu Cookery. A light green colored dip with a green onion nip. Per ¼ cup serving: calories: 66, protein: 4g, fat: 5g, carbohydrates: 3g.
- 1⁄2 cup green onion, cut up
- 1⁄2 cup fresh parsley leaves, loosely packed
- 1⁄2 lb tofu
- 1 tablespoon fresh lemon juice
- 1 tablespoon olive oil
- 1⁄4 teaspoon salt
- Chop green onion and parsley in a food processor or blender.
- Add remaining ingredients and process until smooth and creamy.
