Not made for tofu but from tofu! The best tofu for this is the aseptic long life tofu, using cotton tofu will give you a lumpy sauce.

  1. In a liquidiser purée the tofu with 1-2tbsp of water.
  2. Add the onion and miso and liquidise until creamy.
  3. Add the rice vinegar and extra water if necessary.
  4. Stir in the spring onions and serve over salads, rice or steamed veg.
