Toffee Oatmeal Dried Cherry Cookies

  • Heat oven to 350 degrees. Sift together flour and baking soda and set aside. Cream butter and sugars until light and fluffy, 2 to 3 minutes. Add egg, and mix on high speed. Add vanilla extract. Add flour mixture a bit at a time until well combined. Add oatmeal, cherries, chocolate and toffee pieces. Divide dough into three equal portions, and roll into logs using plastic wrap, approximately 1 1/2 inches in diameter. To bake, cut logs into 3/4 inch pieces. Bake on parchment- lined baking sheet until golden brown 8-10 minutes. Remove from oven, and transfer to baking rack to cool.

  2. Wow, these cookies are really good. I used cherry flavored craisins and they were awesome. I pop them in the microwave for about 10 seconds and the chips melt a little bit, YUM!
     
  3. Yummy cookies! Different and delicious! I only had 1/2 cup toffee pieces but even so the toffee gives these cookies a nice crunch and distinct buttery sweet flavor. The tartness of dried cherries is a nice compliment to bittersweet chocolate. I didn't shape into logs and chill, just formed drop cookies and baked right away which worked well. Thanks for sharing the recipe!
     
  4. Why do I love 'Zaar? Yesterday I had an inexplicable desire to make cookies and the combo dark chocolate chunks, dried cherries and oatmeal came to mind. I did a quick ingredient sift though cookie land and landed here. These cookies surpassed my already high expectations. Gotta go get one now. BYE! (and thanks for my new fave cookie recipe)
     
  5. Even before reading Chef*Lee's review I was going to say that these are dangerously good. There is no other way to describe these. It is one of those cookies where you won't be able to stop eating them until your stomach says 'Enough!'. Dried cherries were a little pricey at the grocery store so I used cherry flavored craisins. I love the idea of rolling the dough into logs and freezing them to bake another time. Take a few minutes out of your day and put together this cookie dough. You can enjoy some cookies now and then you'll have the dough at hand to bake fresh cookies again.
