I love this sandwich! The mayo and cheese is a new idea as I have always eaten them with HP sauce, s & p. Tried it as written and it was yummy! Thanks Kittencal for a new version of an old favorite!

I'ma lifelong fan of the fried egg sandwich,so couldn't help myself when I saw this.I used to eat these things just about every weekend,when I got in from the pub after a fun packed night out! The mayo was a new one on me,and I really liked it..making a nice change from good old Heinz ketchup. These are also great with some crisp bacon (I used to melt the cheese with some ketchup onto the bread first). You just can't go wrong with these,comforting as well as quick and easy....thanks Kit..I think I may start eating more of these,again!!

Yum. I love this sandwhich! I only use 1 tablespoon of butter and only one egg. The little bit of mayo really adds something to this sandwich. I love making this when I'm hungry but don't want to really cook or use a lot of dishes.

Nothing beats a great egg sandwich. Cheese is always a plus too, lol. I did skip the mayo as I am not a big fan so I buttered both pieces of toast lightly. I used sourdough for the toast.

We loved this dish. So easy to make too. I used cooking spray in place of the butter and light mayo. I also crumbled a slice of bacon on top to add to this delicious breakfast. Thanks Kitz

Used thick slices of wholegrain, 1 egg and a slice of sharp vintage cheddar (don't get american cheese in Aus.) but I wasn't so careful and ended with some of the yolk on me. Delicious way to start the day. Thank you Kitten, made for New ZAAR Stars Tag Game. Added 2 slices of crispy bacon (1 rasher halfed) and oh so good, slurp up the yummy runny egg yolk.

I have been making this kind of sandwich for years, usually with only 1 egg though. I can totally vouch for this egg sandwich. I have been known to add sliced Mexican "mild" flavored Velveeta cheese when I have it on hand to give the sandwich a nice kick! Everyone should give it a try either way!

SO good, and very easy. It is really good when you bite into the sandwich and the yolk runs.... down your chin, onto your clothes if you are not careful! But hey, it is a delicious way to start out your morning. I used white bread and used two eggs but got rid of some of the white of the second egg so what I really ended up with was a double yolk egg.

This was good and easy to make. I followed the recipe as written except I didn't add the mayonnaise. I liked that there was yolk to dip the bread into. Yummy - will be making again. I think I will try these on a bagel too.

Since I'm watching my fat intake I made this using Smart Balance in place of the butter, fat free mayo, and only 1 egg. I did use the whole wheat bread and the American cheese. Wonderful, comfort food sandwich!

Delightful! I love to make these - glad you posted this! I used wheat bread - 2 eggs, bacon, American cheese (although sometimes I make it like a toasted cheese with cheddar or swiss too) but opted not to use the full butter or mayo. ;) DEELISH!!! I also make this on english muffins toasted sometimes! Thanks for a keeper breakfast or anytime quickie for me - with or without the bacon!! 123 tag Sept. ;)

What a terrific sandwich. It really hit the spot even tho i had to fold the two eggs over the cheese because i made it so thick :)
