Toasted Rice for Fish----egyptian

Nicely toasted aromatic rice that almost always accompanies fish in Egypt.
Directions:

Heat the oil over med-high heat.

Add the onion, and stir for just a minute to coat with the oil.

Add the rice and coat well with the oil, stir and fry until it becomes a nice brown color.

Now, add the water (but be careful in case it sputters at you) and the spices.

Once it is boiling, cover and simmer over low heat about 20 min or until done.

I made several changes to the recipe, but was happy with the results. I reduced the amount of rice to 1 cup & elected to use brown rice. I then only added a small amount of oil, just enough to barely coat things. I stayed with the recipe amounts for seasoning and found the finished product flavorful. I did have to add additional cooking time because of the brown rice. I served with a saucy shrimp dish, steamed broccoli, and salad. Made for Fall 09 Pick A Chef.

It was interesting and easy to make, but I didn't taste the spices at all, so I would suggest adding more or spicing it up with white or cayenne pepper.
