  1. Separate the eggs.
  2. Beat the egg whites to a peak.
  3. Mix the egg yolks, marscarpone and sugar with a blender until the mixture is creamy.
  4. Dip the savoiardi in the coffee (and coffee liquer if using) and make a layer on the bottom of a pan.
  5. Place a layer of the cream on the cookie layer.
  6. Repeat until there are three layers.
  7. Top with bitter cocoa powder.
