  • Whisk egg whites, placing yolks in a separate glass for later.
  • Empty egg whites into small bowl.
  • Blend cheese, sugar and egg yolks for a minute or until well mixed.
  • Fold egg whites back into cheese mixture.
  • Make up coffee and liquer into shallow bowl.
  • Dip each biscuit briefly into coffee/liquer mixture and make 2 layers in large bowl.
  • Layer 1/3 cheese mixture over first layer of biscuit.
  • Dip remaining biscuits and place over layer of cheese.
  • Top off with remaining cheese mixture.
  • Sprinkle cocoa with sieve just before serving.
  • Use within 1 day (raw egg) but that shouldn't be a problem!
