A weeknight type of meal
- 4 tilapia fillets
- 5 garlic cloves (2 crushed, 3 sliced)
- 1 tablespoon vegetable oil (I used Enova)
- 8 ounces collard greens
- 4 ounces frozen corn
- 1 tablespoon hot sauce (or to taste)
- Heat oil. Add garlic, gently saute.
- Place fillets in pan. Heap collards and corn on top. Add hot sauce. turn once, after about five minutes.
