Tilapia Marinade

ingredients
- 2 garlic cloves
- 118.29 ml fresh parsley
- 1 lemon
- 177.44 ml olive oil
- 59.14 ml red wine (I prefer balsamic) or 59.14 ml balsamic vinegar (I prefer balsamic)
- 14.79 ml dried oregano
- 2.46 ml black pepper
- 0.5 ml Tabasco sauce
directions
- Mince the garlic into fine pieces.
- Chop up the parsley into small pieces.
- Place the parsley and garlic into a jar with a tight fitting lid.
- Squeeze the juice into the jar.
- Add the olive oil, balsamic, oregano, pepper and Tabasco to the jar.
- Put the lid on the jar and shake well.
- Marinade your tilapia fillets for 20-30 minutes.
- I grill my tilapia for about 5 minutes, each side, but you could bake it for 30 minutes, or cook it in a frying pan, sprayed with Pam, for about 15 minutes on your stove top.

I made this for my daughter, who doesn't eat red meat, on a night the rest of the family was having beef tenderloin. It was excellent! I will definitely make this again . . . I think it would also be good for chicken or pork or other light fish. I chose the balsamic rather than the red wine vinegar, although I think both would be good, depending on what flavor you're after.

I really liked this. I used the balsamic and while good it was very much the prominent flavor. I think I will try with red wine vinegar next time for a subtler flavor. I grilled these for about 5 minutes per side but mine must have been a bit thicker (although from Costco) needed a couple of minutes in microwave to finish off.

I am a teacher with a lot of time on my hands this summer!! I have found so many easy and wonderful recipes on this site so I decided to add some of my favorites!
