Simple is sometimes just the best. This is really a pretty simple recipe, but the twist of using sweet potatoes really makes it special. I peeled my potatoes, as I have learned I only really like the skins of new potatoes . I would add just a bit more green onion next time. I don't know that you'd really get 12 servings out of this, myself. Oh, also, I would salt the cooking water - I think that really adds to the flavor.person found this review Helpful. I took this to a Halloween party and it was enjoyed by all and the recipe requested. I made as directed and used a spicy brown mustard! Thanks for posting! This was very nice! I peeled the sweet potato and white potato(skin didn't look all that good) but left the skin on the red potato. I used veggie bacon bits and enjoyed the Dijon in the dressing. I had this for lunch and have enough left over for tomorrow. I did half the recipe. Thanks! Made for PRMR game.people found this review Helpful.
