This brings back memories of being a girl scout leader and making this at camp. Hearty warming and great tasting. Alone with the onions and peppers I just had to add 2 cloves of garlic. Thanks for the memories!

Made this for Let's PARTY 2011 tag game and for our lunch on a cold day...wonderful comfort food. I followed the instructions only adding some fresh minced garlic. Definately one to fall back on and soooo easy. Thank you.

My husband and I thought this was delicious ! The only thing I changed was 1 can of pinto beans instead of 2 cans. Also I added a few chopped jalapeno peppers. I served it with peanut butter and jelly sandwiches. Great ! Thank you !

This was a quick and simple solution for a busy school night! Made this, got the girls fed and off to Nutcracker practice by 5:30! I used one can of Campbell's Minestrone, 1 can of beef broth and one can of Wolfgang Puck's Minestrone, but used the other ingredients as described. Thanks for a nice and fast out-the-door meal!

Winter is arriving here, in good ol' Maryland style. Kinda cold, kinda sleet, kinda ice. Hummm seems like a perfectly good time to make ~Nimz's~ soup. As it happens quite often, I was missing the minestrone soup, but used "Amy's Vegetable Barley" instead. Other then that, all ingredients stayed the same as I wanted to use this as the way it was written. Already had bell pepper, and onion diced from yesterdays lunch and I threw all the rest ingredients right in to maturate and swim with each other. Dennis came down upstairs sniffing like a little ghost finger had beckoned him down to see where it was taking him. Right into this bowl of soup that was gone in no time flat. I didn't have sour cream, so I added a bit of homemade croûtons to the top to float a a raft. Yummy! Will make this often ~Nimz~ and thanks!

This is a very nice soup. Great for after work when time is limited. I halved the recipe and since I used Habitant minestrone soup which is not condensed I didn't add the water. I also included the optional onion.

Very delicious for a 'not-from-scratch' soup. It was so easy and fast to put together. I made it as written except halved the recipe; and it still made enough for 2 or 3 meals. I added the onion-grn pepper option. Great recipe Nimz.

Amazingly delicious for such an easy recipe!!! I thought 3 pounds of meat sounded like a lot, so I cut it back to 1 1/2 pounds. Everyone said that was just right -- and I used ground turkey. We sprinkled some shredded Parmesan cheese on it -- and it was wonderful. It was a little on the spiicy side for the my grandchildren. I think my daughter is goiing to try substituting some stewed tomatoes for the rotel. They aren't fond of sour cream -- so the suggestion of one of the other reviewers didn't work for the kids in the family. Thank you for posting such an easy soup to make -- yet so tasty. Bobbie

A fabulous meal with just about no effort. Just what every busy cook needs in his or her arsenal. I used lean ground turkey with the Progresso low-fat minestrone as well as including the optional pepper and onion. So nice to not have to think about seasonings or testing as this was just right out of the can. Mine was meatier than intended because the lean turkey had very little shrinkage. Just as a matter of personal preference (too many years on WW) I would probably cut the meat back a bit. Excellent!

This soup/stew had an excellent flavor. I halved the recipe (1 can each beans, rotelle, minestrone) and used the onions, peppers along with 1/4 c. of shredded carrots I had on hand. Instead of ground beef, I used spicy turkey sausage and some leftover pork tenderloin, cubed. Like other reviewers, I served this with sour cream and shredded cheddar. The perfect simple, tasty meal for a cool Sunday night. Thanks!

So easy and yummy! I didn't add the onions or peppers and I served it with sour cream and shredded Cheddar-Jack cheese to mellow it out a bit for the kids. It is a great cold-weather soup and will remain on my easy-and-quick list. Thanks!

I did not have the bell pepper. I also added one packet of taco seasoning. I let this simmer on the stove for about 6 hours. We scooped the soup into bowls and added a little shredded sharp cheddar to the top. Everyone loved it, including one of my 6 year old children!

This was sooooo good. And it makes a nice big batch for freezing in lunch size portions. I even health-ed it up a bit more by using half ground turkey and lo-fat minestrone soup (Progresso brand.) Fussy hubby didn't even notice ;-)

I enjoyed this soup so much!! Have been sick and this tasted very good. I also added some garlic and a leek when frying the hamburger. So quick and easy but taste's like good old fashioned home made soup.
