Three Bean and Tomato Salad

"This is not your normal three bean salad - has tomatoes and herbs added and no sugar. Wonderful to take to a potluck dinner. Delicious!"

  • Drain beans and rinse.
  • Combine all ingredients in a bowl; cover and let stand for several hours to marinate.
  • Serve cold.

  1. Awesome salad! I LOVE this! I have a very limited diet and this is perfect for me. It's very strong but I kept going back for more. I found It made too much dressing, so either cut back on the liquid or strain it off and use the extra for a green salad... I subbed red beans for green beans, I also added about 1/3 cup agave nectar to add some sweet, and an extra clove of garlic for some spice and healing. :) Overall, it was really, really good.
     
  2. Thanks for a super recipe. It was the perfect salad for a lovely summer's day. This salad was quick to make; and letting it marinate, made all the flavors come together. It was nice and cold, which made it quite refreshing! I didn't have chickpeas to add to this salad, but it was still delicious! I will make this wonderful colorful salad again. Oh yes...and my husband doesn't like green beans - guess what? He loved them in this salad! :)
