This recipe makes a nice bundt cake that almost tastes like a pina coloda. It's light and mild tasting with a surprise glaze. You won't believe how easy it is to make or how many compliments you will receive. Serve with whipping cream on the side. The whipping cream brings out all the lovely flavours in the cake.

Ingredients Nutrition

  • 1 (18 ounce) box white cake mix
  • 1 (160 g) box coconut cream pudding mix
  • 14 cup coconut, toasted
  • 13 cup vegetable oil
  • 4 large eggs
  • 1 cup pina colada non-alcoholic powdered drink mix, Mr. Goudas (liquid)
  • 13 cup pina colada non-alcoholic powdered drink mix, Mr.Goudas, glaze
  • 23 cup white sugar
  • 14 cup butter
  • 14 cup coconut, toasted
  • 18 cup pineapple, crushed (optional)
  • 1 12 cups whipped cream (optional)
  • 18 cup white rum (optional)

  1. Mix the cake mix, pudding mix, 1/4 cup of toasted coconut, 1/3 cup oil, eggs, and 1 cup of Mr. Goudas Pina Colada in a large bowl and mix at low speed for 1 minute. Beat at medium - high speed for 2 minutes longer.
  2. Pour into greased and floured 10" bundt pan.
  3. Bake at 325° for 60 minutes, or until toothpick comes out clean.
  4. Cool in pan 20 - 30 minutes.
  5. Turn onto baking rack to finish cooling.
  6. When cake is cooled, poke holes in top of cake with toothpicks and slowly drizzle RUM overtop, (IF USING RUM -- Allow cake to absorb rum before adding glaze.).
  7. Now mix the pina colada mix, white sugar, butter, toasted coconut and crushed pineapple into a pot and boil hard for 2 - 3 minutes.
  8. Place a plate under your cake rack and slowly drizzle the glaze over the entire cake, remove plate and pour the excess runoff of glaze back overtop of cake. Do this two or three times. Let cool completely and enjoy with whipping cream.

Almost didn't make this recipe because I had a hard time finding the Mr Goudas products locally. However, a friend of mine got them for me & I was on-track again! I included all the optionals, & this cake proved to be an absolutely great finale for my dinner party. Everyone enjoyed it, & two of my friends asked for a copy of the recipe. I gave it to them, & also strongly suggested that they check out the XAAR site! Many thanks for this recipe!
