- 1 1⁄2 lbs beef stew meat, cut into 3/4 "- 1-inch pieces
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1⁄2 cup chopped green bell pepper
- 1⁄2 cup finely crushed corn tortilla chips, such as Tostitos, measure AFTER crushing
- 3 (15 ounce) cans kidney beans, drained
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1⁄4 teaspoon cinnamon
- 1⁄2 - 1 1⁄2 teaspoon chili powder
- 1 -2 teaspoon cumin
- 1⁄2 teaspoon ground coriander
- 1⁄2 teaspoon pepper
- 1⁄2 - 1 teaspoon salt
- 1⁄4 teaspoon sugar
directions
- Place all in the crock pot in the order listed.
- Gently stir everything together.
- Cover and cook on low for 6-8 hours or on high for about 4 -5 hours.
- When done, mix again very well.
- Serve topped with sour cream, shredded cheese, green onions, etc.

This is my new staple for chili recipe! I tried it over others simply for the name because I was making it for my guy's friends coming over to watch football. I'll admit that I added a diced jalepeno and a little extra chili powder for a good kick. The result was the best chili I've ever had and the guys ate every last bit. I'll definetly make this again, but double the recipe!!

I am so disappointed. I followed this recipe and the only thing i did differently was add a little extra meat and brown it a little before adding to the crock pot. I also softened the veggies a little in the pan and added maybe 1/4 cup wine. And my husband just called to say it is dried out and ruined. As i was making this recipe i did wonder about the fact that there wasn't really a good liquid source...no broth or anything was added. I just used this crock pot a few days ago and it was fine so i dont think the pot itself is the problem.

Top-notch recipe! Love the chunky meat - I double the recipe for my large family, and use 1-1/2 lbs beef, 1-1/2 lbs pork. I also add a couple chopped up hot (habanero) peppers. Tried both with and without cinnamon - I found if I use half the cinnamon the recipe calls for, it comes out just right. I also increase the tostito content by about 50% to get more of a corn flavor. Though I continue to tweak and experiment, the recipe as it stands is FANTASTIC!

wow! This is receipe is amazing. I have tried several chili receipes and nothing compares to this one! I have never used the beef stew meat before. I actually fried the onions and pepper in olive oil and i used 1 package of the chili mix and covered the stew meat over night! Amazing! I never used the crushed tortilla chips before. I definately like it better then the tomatoe paste, This receipe is a keeper!!A I hope i win the chili cook off today! Ill keep ya posted!! Oh yea I did not use the cinnamon based on the other review i found here!
