So easy and so tasty. Serve this as a side dish with broccoli and yellow beans or you can toss it with pasta! Try green tomatoes, never mind coating them with anything just throw them in naked (almost sounds naughty)
- 1⁄2 medium leek, washed,well trimmed and sliced (dark green tops discarded)
- 3 cloves garlic, minced
- 1 teaspoon olive oil
- 1 lb beefsteak tomato, cored and cut into wedges
- 1⁄2 teaspoon dried sage
- salt & pepper
- Saute the leeks& garlic until the leek is golden (medium heat).
- Add tomatoes and seasoning, cook about 3-4 minutes (only until the tomatoe is heated through).
It`s n oldie but a Goodie! I did enjoy this very much. I do suggest making this with store bought tomatoes. A great way to give those shelf tomatoes a boost! I used fresh home grown tomatoes and sage. I think next time I will use basil! Thanks Bergy
