This is just my favorite way to eat spinach salad. I eat this about 2-3 times a week at work, and a lot of people think it's strange, but hey don't knock it til you try it!
- 2 cups Baby Spinach
- 1⁄4 cup cottage cheese
- 1 tablespoon sunflower seeds
- 1⁄4 cup frozen peas, thawed
- 1⁄4 cup kidney bean
- black pepper
- Put it all in a bowl and eat, I use the pepper LIBERALLY.
I added onion, too. That happens often. Thanks for posting. I used the pepper LIBERALLY as indicated per your excellent suggestion. cg;)
Sensational. Popeye would be proud. I doubled the cottage cheese, because I love it, and added two slices of finely diced Spanish onion. The croutons and sunflower seeds add a nice texture. I usually have these ingredients on hand, so it will become a frequent lunch. One day I may restrain myself long enough to get a pic.
TY,TY!!! This is so good!! I am ditching my popcorn and cheese habit in favor of this!! I added some raisins and scallions,a drizzle of honey and tons of freshly cracked black pepper. Might next try some diced Granny Smith;again, thanks so very much!
