The Sloppy Joe

- 1 tablespoon vegetable oil
- 1 cup yellow onion, diced
- 1⁄2 cup bell pepper, diced
- 1 teaspoon garlic, minced
- 1 1⁄2 tablespoons water
- 1 lb lean ground beef
- 1⁄2 teaspoon chili powder
- 3⁄4 cup ketchup
- 1 teaspoon yellow mustard
- 4 hamburger buns, split
directions
- Place a large skillet over medium heat; when it's hot, add oil. Add onions, peppers, and garlic and cook, stirring often, until they've softened and darkened, about 10 minutes. Be careful not to let garlic burn. If pan gets too dry, add the water.
- Add ground beef and chili powder and cook, breaking up beef with a spoon, until it's no longer raw, about 5 minutes. Drain off excess oil, if desired. Add ketchup and mustard and cook until mixture thickens and comes together, about 10 minutes. (Filling may be made up to two days in advance and reheated). While mixture is cooking, toast hamburger burns.
- Place bottom halves of buns onto four plates. Ladle a quarter of the filling onto each bun, add top halves, and serve immediately.

As sloppy joes go, this is a 5 star, but not really 5 star since it's sloppy joes, if you know what I mean. Since it was easy and we liked it, I'll go with 5*. I was really pleasantly suprised at how good it was. I made it primarily because I needed something fast and thought of sloppy joes. I had to leave out the bell pepper since DH doesn't like them, but otherwise made as is. Will make again; put in the "quick last minute" recipes. Made for Zaar Chef Alphabet soup tag game.
