Made from scratch waffles

  1. 1. Heat a waffle iron.
  2. 2. Combine the flours, baking powder, baking soda, salt and sugar in a medium bowl.
  3. 3. Whisk the eggs and butter together in another bowl, and then whisk in the buttermilk.
  4. 4. Add the wet ingredients to the dry and whisk to combine. Rest the batter for 5 minutes.
  5. 5. Lightly coat the waffle iron with nonstick spray.
  6. 6. Ladle waffle batter onto the iron.
  7. Serve immediately or keep warm in a 200 degree F oven until ready to serve.
  8. *For chocolate waffles, use 7 ounces of all-purpose flour (ditch the whole wheat) and add 1 1/2 ounces Dutch-process cocoa powder to the dry mix. Fold in 4 ounces of semisweet chocolate chips to the batter.
