This is a great technique. I made one serving and used cheddar cheese diced red pepper, onion and large shrimp which I cut into bite sized pieces. It needed less than a minute under the broiler to cook the top and a quick pop back under after I put the cheese on top. I would have posted a pic but my omelet stuck to my non-stick pan and didn't look very pretty, but it still was delicious! Made for PAC Spring 2012
