  • Pour sugar, flour, and salt into a 3 quart heavy saucepan and mix with a whisk to remove lumps. Add beaten eggs and slowly pour 1 cup of the milk and beat well with whisk. Slowly add the rest of the milk, evaporated milk, or cream. Cook on medium high, stirring constantly until thickened. Mix in butter and vanilla when pudding begins to thicken. Set aside and let cool to room temperature. Layer a 2 1/2 quart dish with wafers, sliced bananas, and pudding. End with pudding and crumble wafers over last layer.
