- 1⁄2 bell pepper, sliced
- 1⁄2 tomatoes, sliced
- 2 slices smoked chicken breasts
- 2 leaves lettuce
- 4 ounces low-fat cheddar cheese
- 2 slices whole wheat bread
- light mayonnaise
- mustard
directions
- Spread mayo and mustard on each slice of bread.
- Put cheese on each slice of bread.
- Toast bread with cheese in toaster oven.
- Put tomatoes on bread.
- Put lettuce on bread.
- Put pepper on bread.

my mom used to make a reciped like this when i was growing up. I loved it then and i Love it still! the only difference with her recipe is that she would place the tomatoes on the bread and the cheese on top then broil it till the swiss cheese was just PERFECT! its a great wasy to start a sandwich or you could just eat the sandwich open faced like i used to do often. Thanks for bringing back some great memories of my childhood and cooking with my mom!
