The Home Ranch's Honey Pecan Chicken

Very tasty chicken, rolled in crushed pecans with a delicious, creamy honey bourbon sauce. Definitely company worthy! From L.A. Times food section many years ago.

  1. To make sauce, heat butter in medium saucepan.
  2. Add shallots and cook over low heat 3 minutes or until tender, but not brown.
  3. Add orange juice and bourbon, increase heat and continue cooking until liquid is reduced to 1/2 cup.
  4. Add cream and reduce until slightly thickened.
  5. Add honey, vinegar and season with salt and pepper.
  6. If sauce is too thin, make a small amount of cornstarch and cold water slurry. Add it to sauce to thicken (only if needed).
  7. To make chicken, mix flour, thyme, pecans, salt and pepper. Dredge chicken in flour mixture.
  8. Heat small amount of olive oil in a large saute pan.
  9. Add chicken and saute until golden brown.
  10. Pour sauce onto each plate and place chicken breast in center. Serve addition sauce separately.

It was good, but I felt that the orange juice was too overpowering.

The sauce in this dish was divine! I think Sauce Lover really lives up to her name! From the first bite DH & DS were saying they'd eat this one again in a heartbeat. I didn't make any changes in the recipe & I used Jim Beam bourbon whiskey. Thanks for sharing, Sauce Lover! Made, enjoyed & reviewed for Fall 2008 Pick A Chef.
