YUMMY! We NEVER have left over mashed potatoes, so I made instant mashed potatoes (we really like them just as much as real ones :) just so I could try this recipe. Everyone loved it, even the kids. Next time I make mashed potatoes and serve them "as is", I will make extra so we can have this dish a couple nights later. It is REALLY tasty and not "same old, same old"! Thanks!

Wonderful recipe. I always have left over mashed potatoes and this will become my go to from now on. I agree with so many other reviews that you can add or take away ingredients. Now I can't wait for mashed potato night. :) Thanks for posting!

Yum! Thanks for a great recipe to use up those leftover mashed potatoes. cut the recipe down to serve 2 and it worked great. I can foresee a lot of wonderful additions to this as well. will definitely be using this recipe again!

This is a great way to use up leftover potatoes. Mine usually end up tossed out when I find them in the back of the fridge. I didn't use bacon but did use all the other ingredients. My kids didn't even need their usual ranch dressing. It is a very kid friendly recipe.

I made this tonight to use up mashed potatoes from Monday night. While I didn't use bacon or cheese, this was still delicious. I usually don't like leftover mashed potatoes because the consistency changes but I re-whipped the potatoes with low fat sour cream, milk and green onions amd he result was yummy. I will definitely use this recipe again to use up mashed potatoes.

I used some leftover ham instead of bacon. So yummy! What a great way to use up these leftovers... I've always thrown them out since they don't reheat well. Now we'll be sure to make leftovers ;). Even my 3 year old liked them and he never eats mashed potatoes.

This is terrific! I have a son that doesn't like regular mashed potatoes, but loves these! I've used dried chives when fresh green onions aren't available. YUM!

Had these tonight with some leftover swiss steak. I didn't have any green onoins but used chives as one reviewer suggested. I think the green onions would have been great sprinkled on top after removing from the oven. This was very good & we will have it again.

What a great way to use the leftover boiled potatoes from St Patrick's Day! I used a leek and fat free plain yogurt instead of the sour cream. This was creamy and had wonderful consistency along with great taste.

great time and money saver for left over potatoes. I had left over boiled potatoes so we adapted the recipe- peel and mash, a little sour cream on top, dots of butter , salt n pepper, and cheese-yummy

Wonderful idea. I didn't use any green onions but I did use the onion powder. I skipped the black pepper since my leftovers had plenty in them already, and used fat free sour cream & reduced fat mexican cheese. It was so easy, and really jazzed up those boring leftovers. Thank u for sharing!

Very Yummy!! Great idea for them left over mashed potatoes. I didn't have sour cream on hand so left it out and they still tasted great! My picky eaters gobbled the madeover potatoes right up enjoying every last spud!! Thanks so much Pixie!! Will be made again, even if no leftover spuds!!
