The EASIEST Pork Chop Casserole EVER

This is the easiest casserole to put together when you are pressed for time and tastes wonderful. This was my neighbor's grandmothers recipe (who owned RC Cola, if anyone remembers that!) so it is a very old recipe, yet still one of my favorites.

  1. Put rice and broth in a baking dish.
  2. Put sliced vegetables on top of rice and then layer pork chops on top of rice.
  3. Cover and bake at 350 deg for 45 minutes or until rice is tender.

Delicious recipe! It was just as easy as the title indicates. I substituted zucchini for green pepper (my kids aren't big fans of peppers) and it was great. I might consider cooking it for a slightly shorter time next time, as the pork chop were a little dry (but not bad).

Easiest meal I've made in a while and the chops were MOIST! Most of the kids had seconds or thirds and my husband even complimented me on it. (He's not big on pork chops) The only thing I changed was I added some seasonings - salt, pepper, garlic powder, cinnamon and chives - and even that left it fairly bland. I'll definitely make this again, but might brown up the chops first and add some seasonings at that time.

What a great "down home" comforting meal. You can beat how easy to prepare this dish. I used two onions as hubby love lots of them and sprinkled the chops with garlic powder. EXCELLENT dish, deb K. Thanks for sharing.
