  • Saute the onion and sausage in the butter in a skillet for 10 minutes or until browned.
  • Add the potatoes and apples. Sprinkle with the flour. Cook for 2 minutes longer.
  • Stir in the brown sugar, salt, pepper and sage; remove from heat.
  • Roll out the pastry to a 1/8-inch thickness (or use pre-made pie pastry). Cut into 2 1/2 inch circles.
  • Place a heaping teaspoon of the sausage mixture on one side of the circle. Moisten the edge with water; fold into a semicircle, pressing the edge to seal. Brush the surface with a mixture of the egg yolks and water. Place on ungreased baking sheets.
  • Bake at 350 degrees for 20 to 25 minutes or until golden brown. Serve warm.
