"the Continental" Muffin Sandwiches

"I call this sandwich the "Continental" because it has English Muffins, Canadian Bacon, and American Cheese. This is a great sandwich to serve during football games or a lazy day supper."

  • Spread softened butter on muffins.
  • Melt remaining tablespoon of butter in pan and sauté mushrooms and onions until tender.
  • Place 3 slices each of Canadian bacon on top of 4 Muffins.
  • Then top with 1/4 of mushroom and onion mixture.
  • Place a cheese slice and green pepper ring on remaining 4 pieces of English Muffins.
  • Do not put sandwiches together, but place each half on a cookie sheet and broil until cheese is melted and bubbly.
  • Then place halves together and enjoy.

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
