I made these last night for Christmas Eve and they were a hit!!! They were so creamy and quite filling. I used 6 green onions and also added 5 cloves of roasted garlic (baked a head of garlic with the potatoes). I also use a cheddar cheese flavored with jalapenos, which added a little kick. This is a recipe that I will definitely make again and I already know it will be on my Thanksgiving menu.

Great stuffed potatoes! I served these with steaks cooked on the grill and definitely made for a yummy dinner.

My potatoes turned out way too moist and oozed all over the pan. I'm giving this recipe 4 stars though because the flavor was good. Just be careful with the sour cream and milk when adding. Will use this recipe again, but with adjustments.

I omitted the milk completely, and just added a couple extra tbsps of butter and sour cream to make it creamier. I was only making 2 servings so it didn't make sense to bake them so I just microwaved them for about 10 mins. I finished them off in the toaster oven/broiler for 10 additional minutes. It was perfect! Not to mention QUICK! Served alongside grilled asparagus and grilled rib-eye steaks for a wonderful Valentine's dinner!

These are beautiful twice baked potatoes. After looking through the recipes - I felt this was the best recipe. I doubled the recipe and found them to be easy to make and delicious. I did not use the milk. Other than that, I followed the recipe. I felt that the sour cream made the potatoes perfectly creamy. Thank you!

yummy!! these were so tasty!!! i used only 2 potatoes, but used the same amount of sour cream so i ended up not needing any milk. i didn't actually measure anything. i made these up a day ahead of time, so all i had to do was bring to room temp and bake. easy and delish. i loved that they were so loaded with cheese, sour cream, bacon and green onions. fabulous combinations. thanks for the easy, make-ahead keeper!!! will make often.

This was a fairly easy recipe, with great results. I did not have peanut oil, and used olive oil instead. It worked fine. I also did not add the green onion because of personal taste preferences; my eldest DD said these are the first 2x baked potatos that she has tried and liked.

Awesome recipe! It will be my go-to twice baked potato recipe. I used whipping cream, and only used a little less than a 1/4 cup. My potatoes, however, were not huge. Everyone gave rave reviews! Thanks for posting- wonderful recipe!

We love twice-baked potatoes, and this is a winner. I love the extra bacon and onions on top. I prepared these a day early, put them in the fridge, them cooked them for about 30 minutes and they were perfect. Thanks!

Another one best twice baked potatoes to try :) For the potatoes I used 350 F in the oven for 1 hour was not ok. Next time I'll cook them at 400 F for 1 hour. I used no-fat sour cream and I used only half a cup cause I had to keep some for another recipe LOL Only 1/4 cup of milk. I used salt seasoning. I'm so glad to have leftovers for the next days. Thanks Nimz :) Made for Zaar Star Game.

Wow! These are wonderful! I can't imagine anyone not liking these gems!! I used turkey bacon, light cheddar, skim milk, and light sour cream to make a little healthier. We all loved them! Thanks for posting, Nimz!! :)

These were really good!! I am glad I read the other reviews because I got these to come out perfect! I only used a couple tablespoons of milk and it was great! We will have these again real soon!

DH picked this recipe out from a pile that I had printed out and I *should* have read all the reviews, because our filling mixture was also a little on the soft side… in the beginning it was so liquid that I added all the cheddar cheese to firm it up. I did blend in the spring onions too because I was hoping that DD would try these and knew that if she saw them on the top it would be a non starter. The flavour was good, DH, not a potato fan by any means, requested me to make these, but in the end he said he would have preferred something with a little more kick to it, in the way of herbs or salsa or something. We aren’t used to this kind of potato recipe so maybe we just need to get used to the consistency and tastes that are “normal� for everyone else who grew up with this kind of thing. I will try again with these… next time with a LOT less milk and I will throw in a few fresh herbs. Please see my rating system, 3 stars for now but with definite potential for 4 stars once we get it slightly more as we prefer. Personal preferences are always so different, but if you don’t give it a go, you will never know ! Thanks Nimz!

i halved the recipe, and with the benefit of the hindsight from all these reviews, also went easy on the sour cream and milk - and the consistency of the filling was just right. we dont eat bacon, so that was easily omitted. very good recipe, if you use discretion in adding the sour cream and milk according to the amount of potato pulp you scoop out, instead of just blinding following the specified quantities.

The first time I made these I followed the recipe exactly and they were so wet that they would not hold their shape and they oozed all over the pan and it was a mess. The flavor was outstanding, though, so I tried them again. This time I cut the sour cream and milk in half. They were PERFECT! If the author of this recipe were to change the amounts, I would give it 5 stars. The way it is written now, I can only give it 3 stars.

It is probably something I did, but these came out very wet. Too moist. Maybe next time I will cut down on the sour cream. :(

Stuffed baked potatoes at their best! I had never bothered to follow a recipe before-just tossed things in. The proportions here are perfect & produced the best stuffed baked potatoes I have ever eaten. I followed your recipe exactly except substitued vegetable oil for peanut oil (I did not have peanut oil). I also did not used a mixer; I mashed with potato masher. My adult son ate the leftover potato cold for breakfast remarking how good it tasted! Thanks for such a good recipe.
