- 453.59 g can pinto beans, drained
- 453.59 g can black-eyed peas, drained
- 453.59 g can white shoepeg corn, drained
- 226.79 g jar pimientos, drained
- 1 large chopped purple onion
- 1 green pepper, chopped
- 118.29 ml cider vinegar
- 59.14 ml olive oil
- 236.59 ml sugar
- 1.23 ml salt (optional)
- 1.23 ml pepper (optional)
- 411.06 g bag Tostitos Scoops
directions
- Mix first 4 ingredients then add chopped onion & green pepper.
- Refrigerate.
- Meanwhile bring to a boil (stirring constantly) vinegar, oil & sugar.
- pour hot mixture over beans.
- refrigerate at lwast 2 hours (overnight is better).
- drain before serving.
- serve with Tostitos Scoops.
