The BEST Mushroom Stroganoff (Vegan)

I've tried several online recipes for vegan stroganoff but haven't been wowed by any of them. I created this version and it is by far the best we've had. My whole family loves it! It takes amazingly like the stroganoff we remember from our omni eating days. :o)

  1. Cook and drain pasta according to package directions.
  2. Meanwhile, in a large skillet, sauté mushrooms and onions until mushrooms have given up their liquid and onions are translucent.
  3. Add garlic and cook for another 1-2 minutes. Remove from heat.
  4. In a medium sauce pan, bring broth to a boil. Add salt, pepper and worcestershire sauce.
  5. Whisk in flour and continue cooking until sauce begins to thicken.
  6. Return skillet to low heat and stir thickened sauce into mushroom mixture.
  7. Stir in sour cream (don't allow it to boil) and serve immediately over hot ribbon noodles.

I loved how quick this and easy recipe was to make. I think I would have liked some added seasoning, maybe chives or a little dill. I would use less sour cream, I thought it overpowered the flavor of the mushrooms, just personal preference. Thanks for sharing the recipe.

I have never written a review before, but this was so good I had to rate it. It was really easy and I added some meatless meatballs too. I can't wait to make it for friends.

OUTSTANDING!!!! Thank you for such a tasty and wonderful vegan dish. I am saving this one to my recipe box and will be making this again. I used Tofutti Sour cream and Earth Balance. This was the bomb!! I made this dish exactly as you specified, but did add fresh parsley and 1 teaspoon of dried thyme. Next time I would probably add more garlic and maybe 2-3 tablespoons of white wine. FABULOUS! Thank you so much.
