Glad to have a make-ahead version of mashed potatoes. I scaled this recipe back to serve just the two of us. We enjoy our mashed potatoes a bit on the rustic side so I just mashed them with a potato masher vs. the mixer. Although we had this dish right away, I am thankful to have a recipe that can be made and re-heated later. This will work great for the holidays or when family is coming for dinner.
