      We really enjoyed this gumbo! I halved the recipe, and used turkey stock and smoked turkey sausage. I used my own creole seasoning, so I did not make the Essence. I served over basmati rice. I would make this to use up leftover turkey again. Thanks!

      I made this a few weeks ago (with my X-mas leftovers) and it was great! I do remember it being a lil' spicy, but that made it even better. I was too full from eating this at the time to review it ;), but I just found my page that I obviously laid my spoon on!! :rofl: Thanks so much!!

      Delicious!!!! I would make this over and over. I served it over wild rice and used just 1 lb. of turkey sausage.

      I made a half recipe. All family members said 5 stars for this one, which is quite an accomplishment. I've never made a roux before, although I've wanted to attempt it for quite some time now. Have seen it done on TV and read a bit about it on the web. Wasn't so tough, although I did have to cook mine quite a bit longer than 30 minutes until it got dark brown. When I added the broth and water to the roux, it didn't seem it was going to mix. I had flecks of the roux floating around in the broth and it looked like it would never blend and smooth out, no matter how much I stirred with my whisk. Finally figured, what the heck, I'll bring it to a boil anyhow, and that seemed to do the trick. It did blend and smooth out. I did not cook mine for a full 1 1/2 hours, as it got REALLY thick after only about an hour and change. So tossed the meat in and finished it up (I used Turkey Smoked Sausage). In the end it was a really thick, almost gloppy thickness. It was still very good over rice, but I wasn't sure if it was supposed to come out that thick? We only got 4 servings out of a half recipe. Will definitely consider making this again when I have leftover turkey to use up.

      This definitely a winner! DS was skeptical (He thought it didn't look good.), but liked the way it tasted. DW thought it was going to be too spicy, but ended up saying it was just right! I just enjoyed it thouroughly! Thanks for a great recipe!
