- 2 cups flour
- 1 1⁄2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1⁄3 cup vegetable oil
- 3⁄4 cup sugar
- 1 teaspoon vanilla
- 1 egg, plus enough milk to make 1/3 cup
- 16 ounces cream cheese, softened
- 1 teaspoon vanilla
- 3⁄4 cup powdered sugar
- 1⁄2 cup water
- 1⁄2 cup sugar
- 1⁄2 cup orange juice
- 1 1⁄2 tablespoons cornstarch
- your choice mixed fruit
directions
- Mix flour, powder, salt , oil, 3/4 cup sugar, 1 tsp vanilla, and egg/milk mixture together. Press into greased and floured 9 x 13 pan. Bake at 350 degrees for 10 minutes. Cool.
- Beat together cream cheese, powdered sugar and 1 tsp vanilla. Spread over cooled crust.
- Top with your choices of fruit. My favorite is a large mixture of red and green grapes, fresh cherries, kiwi, strawberries, blueberries, cantaloupe and honeydew.
- Bring water, 1/2 cup sugar, orange juice and cornstarch to a boil over medium heat. Cool for a few minutes and then pour over fruit. Chill until ready to serve.

I have been cooking and baking since I can remember. I love to cook and bake, but I love to eat it even more!! I go absolutely nuts at Christmas time and bake anywhere from 30-45 items each year. I always bring about 4 large boxes up to our local organization that helps to feed the homeless in our area.

I do not read "normal" books, I read cookbooks and recipes on the web. My favorite cookbooks are the local collaberation ones(like the good old church cookbooks). I LOVE trying new recipes.
We rarely eat out, I have a hard time paying that much for something that I can usually find a recipe for on the web, plus after having worked in a few restaurants and seeing how they prepare food, can usually make it healthier, too.
