- 1⁄2 cup mayonnaise
- 3 tablespoons Dijon mustard
- 1 garlic clove, minced
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 4 russet potatoes, peeled cooked and cubed
- 3⁄4 cup sliced onion
- 1⁄2 cup bell pepper
- 1 teaspoon celery seed
- 2 hard-boiled eggs
- 1 teaspoon mustard
- 3 dill pickles, cut
- 1 tablespoon pickle juice
directions
- Mix all ingredients except mayonnaise, eggs, and potatoes in a large bowl.
- Carefully add potatoes and eggs, stirring gently so as to not “mush” the ingredients.
- Slowly add mayonnaise, add more if desired texture is more creamy.
- Let chill and serve!

You are right, controlledfreak. This is The Best Ever Potato Salad... When I was a kid, I would drink pickle juice because of the dill flavour. Your recipe which includes not only pickles, but pickle juice, is right in my personal wheelhouse; I have added it to my cookbook and rest assured, it will be repeated. I like recipes that are spicy and fast!!!! Also any homeopathic remedies and stuff that's fun for kids are up my alley as well. :)
