The Best Cauliflower Soup Ever

"I never ate Cauliflower, it was one of those veg that your mum had bribe you into eating as a child! So last week I went out for a pre-theatre meal and guess what the first set menu had on it Cauliflower soup! so ordered it and was shocked to discover this soup was delicious and tasty, so decided to try it out at home with my own touches thrown in! Tip - if you want a bit more spice leave out nutmeg and add 1 Tbsp of curry power after cooking the onion for 1 min! enjoy!"

  • Using a deep saucepan, heat 2 tablespoons of olive oil, add chopped onion cook until soft,but not brown about 5mins.
  • Add chopped garlic cloves.
  • Place the cauliflower and chopped potato into the saucepan, followed by chicken stock and milk and bring to the boil.
  • Cover the soup and simmer for 15-20 minutes, or until the cauliflower is soft.
  • Puree the mixture, add the nutmeg,.
  • Season to taste with salt & pepper and add a sprinkling of chopped parsley and grated cheese. Serve it warm with crusty bread.

  1. Just making cauliflower soup. It needed more liquid than recipe recommended, however I did have a very large cauliflower!!! Next tome I will try using coconut milk, which will make it creamier
     
  2. Oh I am such a bad cook and rarely have ingredients for anything. But I had a craving for cauliflower soup. I found this one and it was simple enough for even me to try. Though I didn't have a potato or any chicken broth. So I threw in some mushroom slices that were starting to try up. Now I also halved the recipe, but mistakenly didn't halve the liquids. The milk I used was almond milk. And of course the 'broth' was a teaspoon of beef crumbles and water. Sigh. But after pureeing and salting and peppering and adding the nutmeg (which scared me, especially since I didn't know what a pinch was) . I did have parsley flakes and I had some shredded fat free Mozzarella cheese so I scattered a bit over the top. And to my extreme surprise, it was tasty!!! Even I, with all my ineptitude and lack of ingredients, had a nice soup. And though I mistakenly didn't halve the liquid, it was a nice consistency. And it sure was low in calories! It'll be my go to soup from now on!
     
  3. This soup was great! Instead of milk I used organic coconut milk and instead of a regular white potato I used a sweet potato. This gave it a wonderful fall time flavor and was a bit healthier that way. As a few other reviews mention, it comes out thick at first, so I just added a bit more stock and coconut milk. It was so delicious! What I also liked about this soup was not only did it taste good, but it is much healthier than a lot of soup recipes that are out there!

Although this soup is lush - I make mine so easily and with just 3 ingredients.......cauliflower, water and stock cubes from your cupboard.....no spices, no butter, no milk and no oils just cut y caulli up, roughly cut yr onion put into saucepan and cover with water. Crumble yr stock cube/s in, bring to boil then simmer about half hour......blend it all down season with salt to taste......easy peasy and thick n silky soup with nearly zero calls and fat free. Great for dieters, great for starters and soo filling

  1. I added 1/2 tbsp. Chlli powder. Really added a kick that was missing
     
  2. It's rather bland. To spice it up I added curry powder and blue cheese (any sort). It gives it much more flavour just add a little at a time and taste - stop when you feel it tastes how you like it.

  4. I first had cauliflower soup in a top notch restaurant and this recipe can hold its own to that soup. The first time I made it, I didn't have a potato so I substituted egg noodles and it was great. The second batch I made I added a strong cheddar and that was yummy too. There is a lot one can do using this recipe as a base.
