These muffins are terrific! And one of the best muffin recipes I've ever tried. We all loved the amount of blueberries and the sweetness was just right - just enough to really bring out the flavor of the berries and give a bit of a crunch to the top and edges. I used blueberries from a U-pick farm. They'd had a hard freeze, killing most of the blossoms and the remaining berries were smaller than normal and very tart. You wouldn't have known that by the way these muffins turned out! We ate them as soon as they were cool enough to handle because they smelled soooo good.
Great simple muffin. I cut the sugar in half and added extra blueberries and the muffins came out great. I left off the topping. Thanks for sharing.
Thanks! I modified it to make it gluten, milk, and sugar free - came out yummy - your recipe proved a great springboard for my changes! I'll post my recipe separately.
Anyone try these in the mini muffin pans?
These are delicious! I forgot to add nutmeg and sugar to the tops but I don't think I'm missing much. I added a 1/4 cup more milk. The batter looked like it needed it. They are moist, perfectly sweet and simple. Great texture! Loved!!
Yum! I veganised this recipe by using flax meal in place of the eggs (combine 2 tbsp flax meal, 6 tbsp water, leave to thicken for 10 minutes) and used soya milk and butter. I also used 1 cup golden caster sugar and around 1.5 cups of caster sugar to up the sweetness (as other reviews have recommended), and added a streusel topping so my batch were in no way healthy, but tasted amazing! Really moist and delicious.
Seriously, this recipe was horrible! Too many berries, they did not cook through, most sank to the bottom, and it tasted bad. I know how to make blueberry muffins and was looking for an even better recipe than the one I have. This was a HUGE disappointment.
I love this recipe! Due to health issues I did use whole wheat flour and only half a cup of sugar. The WW flour made it necessary to add a tad more milk, which in turn increased my bake time, but still they rose beautifully and I found them to be sweet enough with half the sugar and no topping. My three kids gobbled them up as well. Five stars!
I gave these two stars because they are edible but really I like the box mix "blueberry muffins" better. These had no flavor and were extremely dense. I followed the recipe exactly and it just wasn't good. I was really upset I wasted so many blueberries on these.
