"The Best" Banana Bread (or Muffins!)

Okay, another banana bread recipe...But maybe the other ones don't have at least one ingredient that this one does...My family loves the muffins from this recipe...especially when I make mini-muffins! (I usually halve the recipe!) Makes 4 loaves or 60 muffins

• Prep Time: 30 mins
• Cook Time: 40 mins

Ingredients:

Serves: 60

Yield: 4.0 loaves

• 1 ½ cups butter or 1 ½ cups margarine
• 4 cups sugar
• 8 eggs
• 5 cups mashed bananas
• 1 ¼ cups water
• 4 teaspoons baking soda
• 2 teaspoons salt
• 1 teaspoon baking powder
• 6 ½ cups flour
• 1 cup chopped nuts (optional)
• 1 cup chocolate chips (optional, but a must for our family!)

Directions:

1. Cream together butter and sugar.
2. Blend in eggs.
3. Add bananas, water, soda, salt, and baking powder.
4. Blend well.
5. Stir in flour.
6. Add nuts and/or chips, if desired.
7. Pour into 4 greased/floured loaf pans or lined muffin tins.
8. Bake at 350: loaves need 35-40 minutes, or until toothpick inserted in center comes out clean.
9. Muffins need only 18-20 minutes.
10. ***With this recipe, I usually always make muffins to cut down bake time.

Real easy recipe. I quartered the recipe and easily made 16 muffins. I was out of butter so I used Crisco plus 1.5 tsp each of butter flavor and vanilla. I then topped them with buttercream icing mixed with cinnamon. They turned out pretty good. I added pics. Thanks for the recipe.

I halved the recipe and got 3 dozen muffins. Yummy!

Very nice banana bread muffins indeed! My family really appreciated the walnuts and semi-sweet chocolate chips! Unfortunately, I didn't have enough bananas, so I had to halve the recipe...no worries, worked out just great. I did use milk in place of water, had it on hand, so why not? I used all the muffin tins I had available, and decided to use the last little bit of batter to fill my madeleine cookie form pan...saved me a little time and they turned out really cute.
