i came up with this recipe when i was on weight watchers. it is only 4 pts per serving, which for Banana Bread is low. and, it is so good, you won't believe that it is actually healthy!
- set oven to 350 degrees.
- combine dry ingredients.
- in separate bowl cream together softened butter, brown sugar, eggs, and vanilla.
- mash bananas well with fork. stir applesauce into mashed bananas. stir this mixture into creamed butter mixture.
- add flour mixture to banana mixture until well moistened. at this point i often let the batter sit for about 20 minutes in a warm area. this increases the yummy banana flavor!
- stir in chocolate chips.
- spray a bundt pan with cooking spray and lightly flour (loaf pan works also, but i definitely prefer a bundt pan, the bread cooks faster and more evenly). pour batter into prepared pan and bake for 40-45 minutes or until toothpick comes out clean, loaf pan takes 60-65 minutes.
