Thai Meatballs in Curry Sauce

"Thai food--still my favorite. Haven't tried this, but it looks great. It's an appetizer. Take it to a party. Red curry paste is in most grocery stores these days; panaeng can be found at specialty shops."

directions

  • Heat the coconut milk in a medium saucepan over medium heat, stirring occasionally, until it thickens a little and becomes smooth and fragrant, about 5 minutes.
  • Meanwhile, season the ground beef with the salt and shape it into meatballs. Use about 1 T for each one, and place them on a plate.
  • Add the curry paste to the saucepan and cook about 3 minutes more, mashing and stirring to dissolve the paste into the coconut milk. Add the meatballs and cook, turning gently to coat, 1 to 2 minutes.
  • Increase the heat to medium-high, bring to a boil, and add the water, fish sauce, and sugar. Simmer, stirring gently now and then, until the meatballs are cooked through and the sauce is smooth, about 5 minutes. Remove from heat, transfer to a serving bowl, and serve hot or warm.

  1. My family felt the sauce was marvelous, but didn't care for the meatballs with it. I added some shredded carrot, shredded bamboo shoots, slivered onion and red pepper chunks to it and served it over jasmine rice. I think it would have been enjoyed with a different meat MUCH more.

  2. TERRIFIC recipe! This is definately a keeper for me! Great for entertaining, like you made a fuss, TRUE! I got 1 1/2 inch round meatballs making exactly 33 meatballs too! I did find took ALOT long than 5 minutes until they were done, Was more about 20 - 25 minutes, but making these are really fun! THANKS!

  3. We loved this! I added rice noodles to the sauce while it was simmering and it was delicious! I used soy sauce instead of fish sauce and Israeli pepper mix (schug) instead of curry paste. My guests loved it!

  4. Very easy and quick to make. I used green curry paste and ground buffalo meat. I'll definitely make it again, but next time, will use 1/2 the amount of brown sugar. I too served it as a main dish with jasmine rice. This is even better the 2nd or 3rd day as leftovers. Makes awesome meatball sandwiches too.

  5. Absolutely Delicious!! My husband & I LOVED it. We love Thai food but do not have any places where we live to eat at. So I've been trying recipes and we love this plus it is SO easy to make. I didn't have red curry paste so I used yellow and served it over jasmine rice. I know I'll be asked to make this alot. Thanks for the terrific recipe!!

  2. I grew up on Thai food and still love and make it often. I make this into a main dish and serve it family style with hot Jasmine rice... I do a few things differently, but follow the main recipe. I have made this using ground beef, but if I am feeling lazy, I love to substitute Vietnamese beef "meatballs" (bo vien). I just simmer them in the curry sauce and add a can of shredded bamboo shoots. Instead of the brown sugar, I sometimes use palm sugar if I have it on hand. Just before serving, I garnish with a few sprigs of Thai basil... Just delicious served over rice... Thanks for sharing!!!

I live in Utah and work as a secretary for the local university. I got married in Dec. of 2004, and cooking has become my greatest hobby. I love to try new things and I'm trying to broaden my husband's culinary tastes (before we got married, the only spices he was aware of were salt and pepper, if you count them as spices). I like all of my cookbooks, though Tai food is probably my favorite. I don't want anymore cookbooks, though, b/c cookbooks are supposed to be used, and I've got enough to fill a menu in one month without repeating any cookbooks...I go straight through them, trying every recipe and marking it with a code to know when, if, and how I should make it again.
