    Ingredients:

    Directions:

    1. 1
      Clean mussels. chop lemongrass, chillies green pepper, and spring onions and add to the pan with the oil, garlic and ginger. cook for 5 minutes. add the lime juice and coconut milk. Season and simmer for ten minutes. Stir in the mussels, cover and cook for 3-4 minutes until all the mussels have opened. sprinkle with coriander and serve with nice bread.
