I roasted the eggplant with last nights dinner and then assembled mine into cute little sandwiches for breakfast! Great flavors, I added extra lemon zest and loved the freshness it added. Made for ZWT 6 by an Unruly Under the Influence. Zingo!

This was a really good sandwich!! Not normally something I would go for but I am really glad I gave it a whirl! As I was making it I considered leaving the raisins out but decided to go with it based on some of the other feedback. I veganized the recipe by simply replacing the cheese with some The Best Tzatziki. I love, love, love the basil flavours and you know what? For someone who doesn't particularly like raisins, I think they really made the dish! Every now and then you would get a little burst of sweetness! Thanks Mulligan! This is a really great sandwich. I'm surpirsed that it's not as much work as I thought it would be, but it was still well worth it. The raisins were a big surprise, though, and worked really well in the recipe.

Had some beautiful summer tomatoes, basil, and eggplant and this was a different but yummy way to prepare them. We enjoyed this quite a lot, made a nice vegetarian meal. Golden raisins added an unexpected sweetness which complimented the other ingredients nicely. Prepared the eggplant mixture ahead then assembled the sandwiches right before we ate. Thanks for sharing the recipe!
