- 59.14 ml fresh lime juice
- 22.18 ml fish sauce (can be found in Asian markets)
- 22.18 ml sugar
- 22.18 ml minced seeded jalapeno chiles
- 2 garlic cloves, minced
- 2 English cucumbers, halved, seeded, thinly sliced
- 177.44 ml sliced red onion
- 44.37 ml chopped of fresh mint
- 44.37 ml coarsely chopped lightly dry roasted salted peanuts
directions
- Whisk first 5 ingredients in medium bowl.
- Place cucumbers, onion and mint in large bowl.
- Add dressing and toss to coat.
- Season with salt and pepper to taste.
- Sprinkle with peanuts and serve.
