Excellent salad that's so quick and easy to make. My lunch guests loved it. I used lebanese cucumbers that didn't need to be seeded, and bird's eye chillies in place of jalapeno (for a splash of red).

  1. Whisk first 5 ingredients in medium bowl.
  2. Place cucumbers, onion and mint in large bowl.
  3. Add dressing and toss to coat.
  4. Season with salt and pepper to taste.
  5. Sprinkle with peanuts and serve.
