- 1 teaspoon canola oil
- 1⁄2 cup onion, chopped
- 1⁄2 teaspoon red curry paste
- 1 teaspoon sugar
- 12 ounces shrimp
- 1⁄3 cup light coconut milk
- 2 teaspoons fish sauce
- 1⁄4 cup green onion
- 1 tablespoon basil, chopped
directions
- Heat oil and saute onions over medium high heat.
- Add curry paste and saute 1 minute.
- Stir in sugar, saute 15 seconds.
- Add shrimp, saute 3 minutes (or until done).
- Stir in coconut milk and fish sauce and heat through.
- Remove from heat and stir in green onions and basil.
