Bright, light and flavourful! I haven't tried this yet but it looked too beautiful not to post. From Thai-Choice.
- 1 mango, peeled and diced (or peaches)
- 1 tomatoes, chopped and seeded
- 1 tablespoon cilantro leaf
- 1 1⁄2 tablespoons onions, chopped
- 1 yellow capsicum, diced
- 1 red chile, sliced
- 1 tablespoon fish sauce
- 2 tablespoons rice vinegar
- 1⁄2 teaspoon black pepper
- 1 tablespoon sugar
- Combine liquids with seasonings.
- Pour over rest of ingredients and mix.
